Cava, a sparkling wine which is made in exactly the same way as Champagne, has fully established its identity in markets abroad in the last thirty years.

Today Cava is second only to Champagne in world sales of sparkling wines.

Most of the Cava produced in Catalonia is made from three varieties: Macabeo (also called Viura), Xarel.lo (also called Pansà Blanca) and Parellada. Chardonnay has been steadily planted since it was approved by the DO in 1986 and Subirat (Malvasía Riojana) may also be used, as may the red varieties Garnacha, Monastrell and, more recently, Trepat, used for making Cava Rosado.
